Equipment

  • 9-inch springform pan
  • Mixing bowls (large and medium)
  • Electric mixer or hand whisk
  • Grater (for fresh carrots)
  • Measuring Cups and Spoons
  • Rubber spatula
  • Baking tray (for water bath, optional)
  • Oven

Ingredients

For the carrot cake layer:

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 1/2 cups finely grated carrots
  • 1/3 cup chopped walnuts optional

For the cheesecake layer:

  • 400 grams cream cheese softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract

Optional topping:

  • 1/2 cup cream cheese frosting or whipped cream
  • Chopped nuts or a light dusting of cinnamon

Instructions

Step 1: Prepare the pan

  • Preheat your oven to 170°C (340°F). Lightly grease a springform pan and line the bottom with parchment paper. This helps prevent sticking and makes it easier to release the cake later.

Step 2: Make the carrot cake batter

  • In a medium bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  • In a separate large bowl, whisk eggs, granulated sugar, brown sugar, oil, and vanilla extract until smooth and slightly thickened. Fold in the grated carrots and walnuts if using.
  • Gradually add the dry ingredients into the wet mixture and gently fold until just combined. Avoid overmixing to keep the cake soft.

Step 3: Prepare the cheesecake batter

  • In another bowl, beat the softened cream cheese and sugar until completely smooth and lump-free. Add eggs one at a time, mixing gently after each addition. Stir in sour cream and vanilla extract until creamy and silky.

Step 4: Assemble the layers

  • Pour the carrot cake batter evenly into the prepared pan. Carefully pour the cheesecake mixture over the top. If you like, use a knife to gently swirl the layers for a marbled effect.

Step 5: Bake

  • Place the pan in the oven and bake for 55–60 minutes. The edges should look set, while the center should still have a slight jiggle. Avoid overbaking, as this can dry out the cheesecake.

Step 6: Cool slowly

  • Turn off the oven and leave the door slightly open. Let the cake cool inside for about 30 minutes. This helps prevent cracks by allowing gradual cooling.

Step 7: Chill

  • Transfer the cake to the refrigerator and chill for at least 4 hours, preferably overnight. This step is essential for achieving the perfect texture.

Step 8: Serve

  • Slice with a sharp knife, wiping the blade between cuts for clean edges. Serve chilled or slightly at room temperature.

Notes

  • Always use freshly grated carrots for the best flavor and moisture
  • Bring cream cheese to room temperature before mixing
  • Don’t overmix the cheesecake batter to avoid air bubbles
  • Bake at a lower temperature for even cooking
  • Let it cool slowly to prevent cracks
