Equipment

  • Mixing bowls (one large, one medium)
  • Hand whisk or electric mixer
  • Measuring Cups and Spoons
  • Box grater (for fresh carrots)
  • Zester or fine grater
  • 8-inch round cake pan
  • Parchment paper
  • Spatula
  • Cooling rack
  • Knife or cake leveler (optional)

Ingredients

For the Cake

  • 2 cups finely grated carrots
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • ¾ cup vegetable oil
  • 3 large eggs
  • ½ cup fresh orange juice
  • 2 tablespoons orange zest
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon salt

For the Orange Cream Frosting

  • 1 cup cream cheese softened
  • ½ cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tablespoons fresh orange juice
  • 1 teaspoon orange zest

Instructions

Step 1: Prepare Your Pan

  • Preheat your oven to 180°C (350°F). Line your cake pan with parchment paper and lightly grease it. This small step saves you from heartbreak later.

Step 2: Mix the Wet Ingredients

  • In a large bowl, whisk together eggs, granulated sugar, and brown sugar until smooth and slightly creamy. Add the vegetable oil, orange juice, zest, and vanilla extract. Mix until everything looks glossy and well combined.

Step 3: Combine Dry Ingredients

  • In another bowl, sift together flour, baking powder, baking soda, cinnamon, nutmeg, and salt. This ensures your cake is light and evenly textured.

Step 4: Bring It All Together

  • Gradually fold the dry ingredients into the wet mixture. Don’t overmix—just combine until no dry streaks remain.

Step 5: Add the Carrots

  • Gently fold in the grated carrots. The batter will look thick and slightly textured—that’s exactly what you want.

Step 6: Bake

  • Pour the batter into the prepared pan. Bake for 35–40 minutes or until a toothpick inserted in the center comes out clean.

Step 7: Cool Completely

  • Let the cake cool in the pan for 10 minutes, then transfer to a cooling rack. Never frost a warm cake—it will melt everything!

Step 8: Make the Frosting

  • Beat cream cheese and butter until smooth. Add powdered sugar gradually, then mix in orange juice and zest. The frosting should be creamy and slightly fluffy.

Step 9: Frost the Cake

  • Spread the frosting evenly over the cooled cake. You can keep it rustic or smooth it out for a polished finish.

Notes

  • Always use fresh carrots. Pre-shredded ones are too dry.
  • Don’t skip the orange zest—it carries the real flavor.
  • Use room temperature ingredients for smoother batter.
  • Avoid overmixing to keep the cake soft.
  • Let the cake cool fully before frosting.
