Preheat your oven to 425°F (220°C). Line a baking sheet or pizza stone with parchment paper and lightly spray it with nonstick cooking spray.
Cut the cauliflower into florets and pulse in a food processor until it resembles fine crumbs or rice. If you don’t have a food processor, you can grate it manually using a cheese grater.
Transfer the riced cauliflower to a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial—excess moisture will make the crust soggy instead of crispy.
In a large bowl, combine the cauliflower, egg, mozzarella, Parmesan, and seasonings. Stir until a soft dough forms.
Transfer the cauliflower dough to the prepared baking sheet. Using your hands or a spatula, press and shape it into a circle about ¼-inch thick. Make sure the edges aren’t too thin to prevent burning.
Bake the crust for 20–25 minutes, or until golden brown and firm to the touch.
Remove the crust from the oven. Add your favorite pizza toppings—sauce, cheese, vegetables, or meats—and return it to the oven. Bake for an additional 10–12 minutes until the cheese is melted and bubbly.
