Ingredients
  

  • 1/2 Diced yellow onion
  • 1/2 Diced green bell pepper
  • 1 pound Italian sausage
  • 1/2 teaspoon Crushed red pepper flakes
  • 3-4 Minced garlic cloves
  • 15 ounces Tomato sauce
  • 1 teaspoon Dried oregano
  • 1/2 teaspoon Paprika
  • 1/2 cup Water
  • 1/2 teaspoon Granulated garlic
  • 1/4 cup Pecorino romano
  • 8 ounces Fresh mozzarella, small cubed
  • 1 package 10 in flour tortillas
  • Olive oil for drizzling
  • Black pepper and Kosher salt to taste

Instructions
 

  • 400 degrees Fahrenheit should be set for the oven.
  • Brown the Italian sausage in a large pot over medium heat.
  • With a wooden spoon, break up the sausage into fine crumbles after adding the onion and bell pepper.
  • Add the pepper flakes and garlic after the onions and peppers become translucent. 
  • The garlic will continue to cook for two to three minutes, and once it smells fragrant, add the tomato sauce and water. Once the mixture reaches a slow simmer, reduce heat to medium and low.
  • Incorporate paprika, garlic, oregano, and basil into the sauce. Remove from heat, let simmer for 10 minutes, then add Pecorino. Allow mixture to cool for 5 to 10 minutes and taste for seasoning.
  • Each tortilla should be topped with one tablespoon of mozzarella and 3/4 cup sausage mix. Spread more mozzarella cubes evenly over each puff after molding the filling into a rectangle.
  • Using the large sides of the tortilla, fold it around the rectangle like an envelope, then fold the ends over one another evenly. Repeat with remaining puffs, placing folded sides down on a sheet tray.
  • Each puff should be drizzled with olive oil before baking for 18 - 20 minutes.
