- 2 tablespoons olive oil (or substitute butter)
- 1½ pounds boneless chicken breasts, trimmed and sliced into cutlets or strips
- ½ teaspoon garlic powder
- Salt and black pepper, to taste
- 8 oz cremini or white mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups fresh baby spinach
- 1 cup heavy cream (or half‑and‑half for a lighter version)
- ½ cup freshly grated Parmesan cheese
- ¼ teaspoon crushed red pepper flakes (optional, for gentle heat)
- ¼ cup chicken broth (or water to adjust consistency)
- 1 tablespoon fresh lemon juice
- 2 tablespoons chopped fresh parsley (for garnish)
- Optional add-ins: ½ teaspoon Italian seasoning or ¼ cup chopped sun‑dried tomatoes for extra depth
Prepare and Cook the Chicken
Salt, pepper, and garlic powder the chicken.
Heat one tablespoon of olive oil in a large skillet or sauté pan set over medium heat.
Add the chicken pieces and cook 4-5 minutes per side, until brown and cooked.
Transfer the chicken to the sides of the pan, wrap it with foil, and leave it.
Saute the Mushrooms
Put the other half of olive oil (or butter) in the identical pan.
