Ingredients
  

  • 2 tablespoons olive oil (or substitute butter)
  • pounds boneless chicken breasts, trimmed and sliced into cutlets or strips
  • ½ teaspoon garlic powder
  • Salt and black pepper, to taste
  • 8 oz cremini or white mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 1 cup heavy cream (or half‑and‑half for a lighter version)
  • ½ cup freshly grated Parmesan cheese
  • ¼ teaspoon crushed red pepper flakes (optional, for gentle heat)
  • ¼ cup chicken broth (or water to adjust consistency)
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons chopped fresh parsley (for garnish)
  • Optional add-ins: ½ teaspoon Italian seasoning or ¼ cup chopped sun‑dried tomatoes for extra depth

Instructions
 

Prepare and Cook the Chicken

  • Salt, pepper, and garlic powder the chicken.
  • Heat one tablespoon of olive oil in a large skillet or sauté pan set over medium heat.
  • Add the chicken pieces and cook 4-5 minutes per side, until brown and cooked.
  • Transfer the chicken to the sides of the pan, wrap it with foil, and leave it.

Saute the Mushrooms

  • Put the other half of olive oil (or butter) in the identical pan.
  • Add in the sliced mushrooms and fry until they have given out their moisture and begin to get a brown colour; about 5 or 6 minutes.
  • Add the minced garlic, stir, and cook for a minute.

Make the Sauce

  • Reduce heat to medium-low and add in the heavy cream.
  • Add grated Parmesan cheese and crushed red pepper flakes to the stirred mixture and fully melt them until smooth.
  • In case the sauce is too thick, you can add chicken broth to obtain your intended thickness.

Add Spinach + Reintroduce Chicken

  • Add in the spinach and stir it into the sauce until it is completely wilted, 12 minutes.
  • Put the chicken back in the pan so that every piece is surrounded by the sauce.
  • Add a little fresh lemon juice and re-taste to suit salt and pepper.

Garnish& Serve

  • At serving time, top with some fresh parsley.
  • Serve over your pasta, rice, mashed potatoes, or have it pure (low-carb).
