Equipment

  • Mixing bowls (2–3 medium sizes)
  • Electric mixer or whisk
  • Measuring Cups and Spoons
  • 9x13-inch baking pan
  • Spatula
  • Butter knife (for swirling)
  • Oven (preheated)

Ingredients

For the Cake

  • 1 box yellow cake mix about 15.25 oz
  • 1 cup sour cream
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract

For the Cinnamon Filling

  • 1/2 cup brown sugar
  • 1 tablespoon ground cinnamon

For the Crumb Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1/4 cup cold butter cubed

Optional Glaze

  • 1 cup powdered sugar
  • 2 –3 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

Step 1: Preheat and Prepare

  • Preheat your oven to 175°C (350°F). Grease your 9x13-inch baking pan or line it with parchment paper for easy cleanup.

Step 2: Make the Batter

  • In a large bowl, combine the cake mix, sour cream, eggs, oil, milk, and vanilla extract. Mix until smooth and well combined. The batter will be thick and creamy.

Step 3: Prepare Cinnamon Filling

  • In a small bowl, mix brown sugar and cinnamon. This will give that beautiful swirl inside the cake.

Step 4: Layer the Cake

  • Pour half of the batter into the prepared pan and spread evenly. Sprinkle the cinnamon mixture over it. Then gently add the remaining batter on top.

Step 5: Make the Crumb Topping

  • In another bowl, mix flour, brown sugar, and cinnamon. Add cold butter and use your fingers or a fork to create a crumbly texture.

Step 6: Add Topping

  • Sprinkle the crumb mixture evenly over the cake batter.

Step 7: Bake

  • Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Step 8: Cool and Glaze

  • Let the cake cool for at least 15 minutes. Drizzle with glaze if desired.

Notes

  • Don’t overmix the batter—it keeps the cake soft.
  • Use cold butter for the crumb topping to get that perfect texture.
  • Let the cake cool slightly before cutting—it helps the layers set.
  • Add chopped nuts for extra crunch if you like.
