Ingredients
  

  • 2 tablespoons olive oil
  • 1 medium onion finely chopped
  • 6 cloves garlic minced
  • 2 cans 15 oz each white beans (cannellini or great northern), drained and rinsed
  • 4 cups vegetable broth
  • 1 teaspoon fresh rosemary finely chopped (or ½ teaspoon dried)
  • 1 bay leaf
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper
  • ½ teaspoon red pepper flakes optional
  • 1 tablespoon lemon juice
  • 2 cups fresh spinach or kale optional

  • Extra drizzle of olive oil

Instructions
 

Step 1: Sauté the Aromatics

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5–6 minutes until soft and translucent. Stir occasionally so it doesn’t brown too quickly.
  • Add the garlic and cook for another 1–2 minutes, just until fragrant. This is where the magic begins—your kitchen will smell incredible.

Step 2: Build the Base

  • Add the drained white beans to the pot and stir to coat them in the oil and aromatics. Let them cook for 2–3 minutes so they start absorbing flavor.
  • Pour in the vegetable broth and add the rosemary, bay leaf, salt, black pepper, and red pepper flakes.

Step 3: Simmer Gently

  • Bring everything to a gentle boil, then reduce heat and let it simmer uncovered for about 20 minutes. This allows the flavors to meld beautifully.

Step 4: Blend for Creaminess

  • Remove the bay leaf. Using an immersion blender, blend part of the soup directly in the pot until you reach your desired consistency. I like to keep it partially chunky for texture.

Step 5: Add Greens and Finish

  • Stir in the spinach or kale and cook for another 3–5 minutes until wilted.
  • Finish with a squeeze of lemon juice to brighten the flavors.

Step 6: Serve Warm

  • Ladle into bowls and top with parmesan, a drizzle of olive oil, or serve with crusty bread on the side.

  • Don’t rush the garlic—it should be fragrant, not burnt
  • Use good-quality olive oil for better flavor
  • Blend only part of the soup for the perfect texture
