Step 1: Build the Flavor Base

  • Heat olive oil in a large pot over medium heat. Add the chopped onion and cook for about 5–6 minutes until soft and translucent.
  • This step sets the foundation for the soup, so take your time and let the onions soften gently.

Step 2: Add Garlic

  • Stir in the garlic and cook for 1–2 minutes until fragrant. You’ll start to smell that warm, savory aroma that signals something delicious is coming.

Step 3: Add Artichokes and Broth

  • Add the artichoke hearts and stir them into the onion mixture. Let them cook for a couple of minutes to soak up flavor.
  • Pour in the vegetable broth, then add thyme, salt, and black pepper.

Step 4: Simmer Gently

  • Bring the soup to a gentle boil, then reduce the heat and let it simmer for 15–20 minutes. This allows all the flavors to blend together beautifully.

  • Let it warm through for a few minutes without boiling.
