- 1½ pounds beef stew meat cut into bite-sized pieces
- 1½ pounds baby potatoes halved
- 4 tablespoons unsalted butter melted
- 5 cloves garlic minced
- 1 tablespoon olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- ½ teaspoon onion powder
- ½ cup beef broth
- 1 tablespoon Worcestershire sauce
- Fresh parsley for garnish
Step 1: Prepare the Beef
Start by cutting the beef into bite-sized pieces if it isn’t already prepared. Pat the beef dry with paper towels. This small step helps the seasoning stick better.
Place the beef in a large mixing bowl.
Step 2: Season the Meat
Add salt, black pepper, smoked paprika, onion powder, thyme, and parsley to the beef. Toss everything together until the meat is evenly coated with seasoning.
The spices add depth and give the beef a beautiful savory flavor.
Step 3: Prepare the Garlic Butter
In a small bowl, combine the melted butter, minced garlic, olive oil, Worcestershire sauce, and beef broth. Stir everything together until fully combined.
This mixture becomes the flavorful sauce that makes the dish so irresistible.
Step 4: Add Ingredients to the Crockpot
Place the halved baby potatoes at the bottom of the crockpot. Spread them evenly so they cook properly.
Next, add the seasoned beef bites on top of the potatoes.
Pour the garlic butter mixture over everything.
Step 5: Slow Cook
Cover the crockpot with the lid and cook on LOW for 6 hours or HIGH for 3–4 hours.
During this time, the beef slowly becomes tender while the potatoes absorb all the delicious juices.
Step 6: Stir and Finish
About 30 minutes before serving, gently stir the mixture so the sauce coats everything evenly.
When finished cooking, the beef should be fork-tender and the potatoes soft.
Step 7: Garnish and Serve
Sprinkle freshly chopped parsley over the top before serving.
Serve warm and enjoy every buttery, garlicky bite.
