- 2 Pounds red potatoes cubed into smaller pieces
- 4 hard-boiled eggs (diced)
- 1/2 cup Finely chopped red onion
- 1/4 cup finely chopped celery
- 1 cup Mayonnaise
- 2 tablespoons Yellow mustard
- 2 tablespoons Apple cider vinegar
- 1 teaspoon Paprika
- 1/2 tablespoon Granulated white sugar
- 1/2 tablespoon Salt and pepper
- 1/4 cup Chopped dill optional
Over high heat, bring water to a boil in a large pot. During the last 10-15 minutes of cooking, add the cubed potatoes and cook until they are tender. Set aside once you have drained them in a colander.
