Equipment

  • 9‑inch round cake pan
  • Mixing bowls
  • Hand whisk or electric mixer
  • Silicone spatula
  • Potato masher or food processor
  • Measuring Cups and Spoons
  • Parchment paper
  • Cooling rack

Ingredients

  • 2 cups mashed roasted sweet potatoes
  • 3 large eggs
  • 1/2 cup honey or maple syrup
  • 1/2 cup almond flour
  • 2 tablespoons coconut oil melted
  • 1 tablespoon freshly grated ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Optional toppings:

  • Powdered sugar
  • Whipped cream
  • Toasted coconut flakes

Instructions

Step 1: Roast the Sweet Potatoes

  • Preheat your oven to 400°F (200°C). Roast whole sweet potatoes for about 40 minutes until fork‑tender. The natural sugars intensify during roasting, which makes the cake beautifully flavorful.

Step 2: Mash Until Smooth

  • Once the potatoes are cool enough to handle, peel and mash them until completely smooth. I like using a food processor to create an ultra‑creamy texture.

Step 3: Mix the Wet Ingredients

  • In a large bowl, whisk together the mashed sweet potatoes, eggs, honey, melted coconut oil, vanilla extract, and fresh ginger until the mixture looks smooth and glossy.

Step 4: Combine the Dry Ingredients

  • In another bowl, stir together almond flour, baking powder, cinnamon, nutmeg, and salt. This spice blend gives the Flourless Sweet Potato Ginger Cake its warm signature flavor.

Step 5: Create the Batter

  • Gradually fold the dry ingredients into the sweet potato mixture using a spatula. The batter should look thick, creamy, and fragrant with ginger and cinnamon.

Step 6: Prepare the Cake Pan

  • Line a 9‑inch cake pan with parchment paper and lightly grease the sides. Pour the batter in and smooth the top evenly.

Step 7: Bake to Perfection

  • Bake at 350°F (175°C) for about 35–40 minutes until the center is set and the top turns lightly golden.

Step 8: Cool and Slice

  • Allow the cake to cool completely before slicing. This helps the texture firm up and makes slicing much easier.

Notes

  • Roast sweet potatoes instead of boiling them for deeper flavor
  • Use fresh ginger for a bright aroma
  • Let the cake cool fully before cutting
  • Add chopped walnuts for texture
