Equipment

  • Muffin tin (12-cup preferred)
  • Mixing bowls (one large, one medium)
  • Measuring Cups and Spoons
  • Wooden spoon or dough whisk
  • Stand mixer (optional but helpful)
  • Clean kitchen towel or plastic wrap
  • Pastry brush
  • Oven

Ingredients

  • 3 cups all-purpose flour
  • 1 packet 2 ¼ tsp active dry yeast
  • 1 cup warm water not too hot
  • ¼ cup extra virgin olive oil plus more for drizzling
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3 cloves garlic finely minced
  • 1 tablespoon fresh rosemary chopped (or 1 tsp dried)
  • ½ teaspoon black pepper
  • Flaky sea salt for topping

Instructions

Step 1: Activate the Yeast

  • In a medium bowl, combine warm water, sugar, and yeast. Let it sit for about 5–10 minutes until it becomes foamy. This means your yeast is alive and ready to work.

Step 2: Make the Dough

  • In a large mixing bowl, add flour and salt. Pour in the yeast mixture along with olive oil. Mix everything until a sticky dough forms.

Step 3: Knead the Dough

  • Transfer the dough to a lightly floured surface and knead for about 8–10 minutes until smooth and elastic. If using a stand mixer, knead on medium speed for about 5–6 minutes.

Step 4: First Rise

  • Place the dough in a lightly oiled bowl. Cover with a towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.

Step 5: Prepare the Flavor

  • In a small bowl, mix minced garlic, chopped rosemary, black pepper, and a bit of olive oil.

Step 6: Shape into Muffins

  • Punch down the dough and divide it into 12 equal portions. Place each piece into a greased muffin tin.

Step 7: Second Rise

  • Cover and let the dough rise again for 30 minutes. It should puff up nicely.

Step 8: Add Toppings

  • Using your fingers, gently dimple the tops of each muffin. Spoon the garlic rosemary mixture over each one. Drizzle with olive oil and sprinkle flaky sea salt.

Step 9: Bake

  • Bake in a preheated oven at 200°C (400°F) for 20–22 minutes, or until golden brown.

Step 10: Cool and Serve

  • Let them cool slightly before removing from the pan. Serve warm for the best flavor.
