Ingredients

  • 1 pound  Beef stew meat
  • 1 medium onion, (chopped)
  • 3-5  Garlic cloves,(smashed)
  • 1 tablespoon Tomato paste
  • 1 28-ounce can of tomatoes (whole peeled)
  • Bay leaves (dried)
  • 3 celery stalks (chopped),
  • 2 medium carrots, (chopped)
  • 2 medium potatoes, (chopped)

Instructions

  • A tablespoon of oil should be heated in a pot. Firstly, pat the beef dry and lightly salt it before lightly browning it (on all sides) over medium heat. Remove the beef from the skillet once it has been browned.
  • In case more oil is needed, add it to the pot. Toss in the onions and garlic, and saute for three to five minutes, until golden brown.
  • The tomato paste should be added now. Continuing to cook for two more minutes will result in a darker, brick-red tomato paste.
  • The tomatoes should be peeled and the bay leaves should be added to the mixture along with ½ cup of water. The beef needs to be added back in. Then bring it to a boil. After that, reduce the heat to a simmer. A lid should be put on the pot, and it should simmer for an hour.
  • The lid should be removed, and the heat should be turned back to medium-high. Potatoes, celery, and carrots can be added now. The meat and vegetables should be completely covered in water (you should add more water if necessary). Set the stove to high and bring the water to a boil. Then reduce the heat to a simmer. Simmer for an additional hour with the lid on. Black pepper and salt should be added generously.
  • Hot rice should be served with it.
