Ingredients
  

  • 6 Eggs
  • 4 cups  Sugar
  • 1 teaspoon  Vanilla
  • 2 1⁄2 teaspoons Salt
  • 1⁄2 teaspoon  Baking powder
  • 1 1⁄2 teaspoons Nutmeg
  • 1 1⁄2 cups  Vegetable oil
  • 4 cups  Pumpkin puree (canned)
  • 6 cups  Flour
  • 3 teaspoons  Baking soda
  • 3 teaspoons  Cinnamon
  • 1 cup  Chopped nuts (optional)
  • 1 cup  Chopped raisins (optional)

Instructions
 

  • Turn the oven on to 350 degrees Fahrenheit.
  • The oil, sugar, and eggs should be beaten together until they are light and fluffy.
  • Make a well-blended mixture of vanilla and pumpkin.
  • Put the flour, salt, baking soda, baking powder, cinnamon, and nutmeg in a bowl and sift them together. On low speed, beat the pumpkin mixture until blended.
  • The nuts and raisins can be added if desired.
  • After sprinkling cooking spray on two 9x5-inch loaf pans, pour batter into them.
  • The cake needs to be baked at 350F for 60 minutes or until a toothpick inserted into the center comes out clean.
  • Cool bread on a rack after removing it from the pans.
