- 20 fresh peppers of your choice (Fresno, Cayenne, and Jalapeno are good ones)
- 1 1/2 cups white vinegarĀ
- 1/2 teaspoon salt
- 3 teaspoons minced fresh garlic
Make sure you wear kitchen-safe gloves when you wash the peppers.
Peppers should be sliced lengthwise after being cut off their tops.
Combine vinegar with peppers, salt, and garlic in a saucepan/pot. Once the mixture reaches a boil, reduce heat to a low boil and simmer until the peppers are soft (about 10 minutes).
Peppers and vinegar should also be added to your blender.Make sure all the seeds are blended until a liquefied consistency is achieved. You can add more heat if you like. Taste and re-blend if you like it hot (maybe half of a Habanero).
