Ingredients
  

  • 1 Small Onion (finely chopped)
  • 2 tablespoons of water dissolved in 1 tablespoon cornstarch
  • 6 ounces Red chili peppers (dried or fresh)
  • 4 Minced cloves Garlic
  • 1 inch piece Ginger grated
  • 1 cup Apple cider vinegar
  • 2 tablespoons Soy sauce
  • 2 tablespoons White sugar
  • 1 teaspoon Salt
  • 1 cup Water

Instructions
 

  • Red chili peppers that have been dried need to be soaked for 20 minutes in hot water so that they soften. The stems and seeds should be removed after draining. If you are working with fresh peppers, skip this step and move on to the next one.
  • Blend the chili peppers, minced garlic, chopped onion, and grated ginger in a blender or food processor until smooth.
  • Add the chili paste, apple cider vinegar, soy sauce, white sugar, and salt to the saucepan and mix well.
  • The mixture should be brought to a gentle boil in a saucepan over medium heat. 
  • Stir the flavors together for 10 minutes by reducing the heat to low.
  • Make a slurry by combining cornstarch with water in another bowl. In a saucepan over low heat while stirring continuously, slowly pour in the slurry.
  • Add 5 more minutes of cooking time until the sauce is the consistency you desire. More water can be added if the sauce is too thick; more water can be added if it is too thin.
