Instant Pot Cauliflower Mashed Potatoes Recipe

Instant Pot Cauliflower Mashed Potatoes is a way to make mashed potatoes by combining cauliflower and potatoes in an Instant Pot. Switching traditional mashed potatoes for Cauliflower Mashed Potatoes with an Instant Pot is healthier because of the cauliflower.

Ingredients
  

  • 1 large head of cauliflower (cut into florets)
  • 3 cloves garlic (peeled)
  • 1/3 cup low-sodium chicken broth or water
  • 2 tablespoons unsalted butter
  • 1/4 cup sour cream or plain Greek yogurt
  • Salt and pepper, to taste
  • Optional: 1/4 cup grated Parmesan cheese
  • Optional toppings: chopped chives, crispy bacon bits, or melted butter

Instructions
 

  • Clean the cauliflower head and split it into bite-size pieces. As a result, food is evenly cooked inside the Instant Pot. The garlic should be removed from its skin and added to cook with the cauliflower, so it adds flavor.
  • Add the cauliflower florets and garlic cloves inside the Instant Pot. Jus de poulet or simply water is enough; pour it in. Put on the lid and change the valve to Sealing.
  • Press the Manual/Pressure Cook button and cook under high pressure for 5 minutes.
  • When the timer is done, close the Oven Off button and open the door, always ensure it is open during the roasting process, so that the steam is released. When you hear the pin drop, be careful when you open the lid.
  • If possible, drain any added or leftover liquid. Extra moisture might turn your mash into a liquid.
  • When the cauliflower and garlic are cooked, stir in the butter, sour cream (or Greek yogurt), salt, and pepper.
  • If you want a chunky texture, use a potato masher to mix the ingredients until everything is well mixed.
  • If you want your mash to be smooth and creamy, try using an immersion blender or put the ingredients in a food processor or blender.
  • Round out the taste by adding grated Parmesan cheese or roasted garlic to your sauce. Add salt or pepper if the taste is not right.
