Ingredients
  

  • 4 Roma tomatoes
  • 1 yellow onion
  • 2 guajillo chiles
  • 1/3 cup Apple cider vinegar
  • 4 cloves of garlic (large)
  • 1/2 cup Packed brown sugar
  • 1/2 cup Hot water
  • 1 tablespoon Kosher salt

Instructions
 

  • To begin, position a wire rack just above your broiler, 6 inches from the top of your oven, and preheat the broiler to high.
  • Cut onion slices and tomatoes in half, then place them on a cookie sheet cut side down. Roast for about 10 minutes or until slightly charred.
  • Put one tablespoon of vegetable oil in a pan and sauté garlic for about a minute, flipping occasionally, until they are just toasted (but do not burn).
  • Pour some water and vinegar into a blender, add the chiles and garlic, and let them sit for 5 minutes. Pour in the remaining vegetable oil slowly and steadily after pureeing on high speed for 10 to 20 seconds. Using this method will help create the creamy texture you want!
  • Blend it one last time on high until smooth before adding the tomatoes, onion, and salt.
  • You have just finished making your delicious sauce!
