You can prepare your fries by washing and scrubbing your potatoes, followed by patting them dry with paper towels. You must peel the potatoes and slice them into thick fries that are ¾ inches long by 3 inches wide.
3 tablespoons of salt should be added to a pot of boiling water.
Cover 1 quart of water with a lid and steam potatoes for 10-12 minutes, or until a knife is inserted cleanly. Keep potatoes from being mushy or falling apart by not cooking them through.
Place the potatoes in a bowl drizzle the oil over them and Toss them gently so that the oil coats each one.
Transfer the potatoes to a nonstick baking sheet and arrange them evenly.
Baking them at 450 degrees for about 10 minutes, turning them around to make sure even baking, and then baking them for an additional 5-10 minutes, watching them carefully so they don't burn, is the best way to prepare them.
The cheese sauce can be made while the potatoes are baking. The butter should be melted on medium heat in a medium saucepan. Adding flour and milk slowly and stirring until no lumps remain is the key to a smooth batter. When the cheese has melted and the sauce has become creamy, add the shredded cheese.
Take your fries out of the oven once they're fully cooked, and sprinkle the Cajun seasoning over them.
You can drizzle the fries with ranch dressing and top them with about ¼ cups of cheese sauce. To dip your chips in the cheese sauce, reserve the rest.
