Ingredients
  

  • 4 tablespoons (1/2 stick) unsalted butter
  • One 10-ounce bag (about 6 cups) of mini marshmallows
  • 5 cups Lucky Charms cereal
  • 1 ½ cups crisped rice cereal (like Rice Krispies)
  • ½ teaspoon vanilla extract (optional, but recommended)
  • Pinch of salt (balances the sweetness)
  • Tip: Reserve about ½ cup of marshmallow charms to press on top for visual appeal.

Instructions
 

Ready the Pan

  • Lightly spray a 913-inch baking pan with nonstick cooking spray or use parchment paper so that the bars can easily be removed. Set aside.

Add the Marshmallows and melt them

  • Melt the butter in a large pot over low heat. After melting, add the mini marshmallows and stir. Continue stirring until totally smooth and melted. Take off the heat and add in the vanilla extract and salt.

Combine the Cereals

  • Stir in Lucky Charms and crisped rice cereal immediately. Using a buttered spatula, fold in to evenly coat the cereal with the marshmallow mixture. Carefully push the marshmallow shapes.

Press Into Pan

  • Pour the mixture into the ready pan quickly. With a spatula (lightly butter or waxed paper) press the mixture into the pan in an even layer, without pressing it very firmly (they should remain soft).

Decorate and Cool

  • Press Lucky Charms marshmallows into the top when still warm. The bars should be left to cool to room temperature for at least 30 minutes before slicing.
