Ingredients
  

For the Cookie Dough

  • 150 g unsalted butter softened
  • 100 g brown sugar
  • 50 g caster sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 150 g plain flour
  • 1/2 tsp baking soda
  • 1/2 tsp cinnamon optional but recommended
  • 120 g rolled oats
  • 100 g raisins
  • Pinch of salt

Instructions
 

Step 1: Preheat the Oven

  • Preheat your oven to 180°C (160°C fan). Line a baking tray with parchment paper to prevent sticking.

Step 2: Cream Butter and Sugars

  • In a large bowl, beat the softened butter, brown sugar, and caster sugar together until light, fluffy, and pale in color. This step is key—it creates the base for soft, tender cookies.

Step 3: Add Egg and Vanilla

  • Mix in the egg and vanilla extract. Beat until the mixture is smooth and fully combined.

Step 4: Mix Dry Ingredients

  • In a separate bowl, whisk together the flour, baking soda, cinnamon, and salt.

Step 5: Combine Wet and Dry

  • Gradually add the dry ingredients into the wet mixture. Stir gently until just combined—avoid overmixing.

Step 6: Fold in Oats and Raisins

  • Add the rolled oats and raisins. Fold them in using a spatula until evenly distributed throughout the dough.

Step 7: Shape the Cookies

  • Scoop tablespoon-sized portions of dough and place them onto the prepared tray. Leave space between each cookie, as they will spread slightly.

Step 8: Bake

  • Bake for 10–12 minutes, or until the edges are golden and the centers still look slightly soft.

Step 9: Cool and Set

  • Let the cookies cool on the tray for 5 minutes before transferring them to a wire rack. This helps them firm up while staying soft inside.

Notes

  • Always use room temperature butter for smooth creaming
  • If raisins are dry, soak them in warm water for 10 minutes
  • Chill the dough for 20 minutes if you want thicker cookies
  • Use a cookie scoop for even sizes
