Ingredients
  

For the Base:

  • 2 cups digestive biscuits crushed
  • 1/2 cup melted butter

For Cheesecake Filling:

  • 2 cups cream cheese softened
  • 1 cup heavy cream
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 eggs for baked version

For Mixed Berry Swirl:

  • 1 cup strawberries
  • 1/2 cup blueberries
  • 1/2 cup raspberries
  • 1/3 cup sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch mixed with water

Instructions
 

Step 1: Prepare the berry sauce

  • In a saucepan, add strawberries, blueberries, raspberries, sugar, and lemon juice. Cook on medium heat until the berries soften and release juice. Mash gently and simmer until thick. Add cornstarch slurry and cook until glossy. Let it cool completely.

Step 2: Prepare the base

  • Crush digestive biscuits into fine crumbs and mix with melted butter. Press firmly into a springform pan and chill for 15 minutes.

Step 3: Make the cheesecake filling

  • In a large bowl, beat cream cheese and sugar until smooth. Add vanilla extract and mix again. Slowly add cream and eggs (if baking), mixing until creamy and lump-free.

Step 4: Assemble

  • Pour cheesecake filling over the chilled base. Spoon berry sauce on top in small dollops.

Step 5: Create the swirl
