  • 2/3 cup Snow Peas
  • 1 pound Rotini Pasta
  • 3 tablespoons Water Chestnuts diced and drained
  • 1/3 cup Red Bell Peppers diced
  • 1/3 cup yellow peppers diced
  • 1/4 cup Red onions diced
  • 1/3 cup Carrots shredded

For Dressing

  • 1 tablespoon Lemon juice
  • 1/3 cup Red Wine vinegar
  • 2/3 tablespoon Olive oil
  • 1 tablespoon Italian Seasonings

Instructions

  • Your first step is to boil the peas for a few minutes in boiling water.
  • Set aside the snow peas after removing the water from them.
  • Then, add the dried rotini pasta to the skillet filled with water and boil until it's tender.
  • You need to drain the pasta once it has been cooked. Then, submerge the pasta in an ice bath and stir the paste well.
  • Mix the pasta with the snow peas in a large bowl after it has been drained.
  • Add the red and yellow bell peppers to a separate bowl and mix thoroughly. Vinegar, lemon juice, red onions, and carrots should also be mixed in.
  • Olive oil and water chestnuts should be added as well. Finalize by adding the Italian seasonings.
  • The prepared dressing including vegetables should be mixed with the cooked pasta and snow peas.
  • You're ready to serve your Newk's Pasta salad. To make it look more enchanting, you can also top it with mayo or cream.

Notes

  • Begin with fresh, crisp vegetables for the best salad experience.
  • Cook your pasta just until it's al dente to prevent it from turning mushy.
  • After boiling, cool the pasta quickly by rinsing it with cold water.
  • Start by adding a portion of the dressing and gradually increase it to avoid overdressing.
  • Allow the salad to marinate in the refrigerator for at least an hour for enhanced flavors.
  • Get creative with garnishes like fresh herbs or grated Parmesan cheese.
  • To turn it into a main course, consider adding grilled chicken, shrimp, or tofu for extra protein.
  • Remember that Newk's Pasta Salad is best enjoyed cold, so serve it chilled.
  • Taste the salad before serving and adjust the seasonings as necessary.
