One Pot Smoked Sausage, Green Beans, and Potatoes

Ingredients
  

  • 1 tablespoon olive oil
  • 1 pound smoked sausage, sliced into ½-inch rounds
  • 1 small yellow onion, chopped
  • 3 garlic cloves, minced
  • pounds baby potatoes, halved or quartered if large
  • 3 cups green beans, trimmed (fresh or frozen)
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried thyme
  • Salt and black pepper, to taste
  • 2 cups chicken broth, low sodium preferred
  • 1 tablespoon butter (optional, for added richness)
  • Fresh parsley, chopped, for garnish

Instructions
 

  • Heat olive oil in a large Dutch oven or deep skillet over medium heat. Add sliced sausage and cook for 4–5 minutes until browned. Remove the sausage and set it aside.
  • In the same skillet, add chopped onion and cook for 3–4 minutes until softened. Stir in garlic and sauté for 30 seconds until fragrant.
  • Add halved baby potatoes, smoked paprika, thyme, salt, and pepper. Stir to coat the potatoes in the seasonings. Incorporate the chicken broth into the mixture and bring to a boil.
  • Reduce heat to a low simmer, cover the skillet, and cook for 12–15 minutes, stirring occasionally, until potatoes are fork-tender.
  • Return the sausage to the pot. Add green beans and stir to combine. Cover again and cook for another 7–10 minutes until the green beans are tender and the sausage is heated through.
  • Optional: Stir in a tablespoon of butter for added richness. Taste and adjust seasoning if needed. Garnish with chopped parsley before serving.
