- 1/2 cup Extra-virgin olive oil
- 1/2 cup Distilled white vinegar
- 3 tablespoons Fresh basil leaves (Chopped)
- 1 cup Blue cheese

- Water as needed
- Pinch of white sugar (optional)
- Freshly ground black pepper

In a small bowl, combine olive oil, white sugar, distilled white vinegar, fresh basil, black pepper, and kosher salt.
Then whisk in the Dijon mustard and full-fat sour cream until the dressing is creamy and velvety.
Fold in the blue cheese, breaking it up with a spoon or spatula as you do so. There should now be a luxurious, indulgent texture to the dressing.
To thin out the mixture, add a few tablespoons of water.
After all the ingredients have been incorporated, add 14 teaspoons of balsamic vinegar.
To serve, drizzle over your favorite salads after sampling and seasoning.
