Equipment

  • Mixing Bowl
  • Hand whisk or electric mixer
  • Measuring Cups and Spoons
  • Mini bundt pan or silicone mold
  • Spatula
  • Oven
  • Cooling rack

Ingredients

  • 1 cup oat flour
  • 1/2 cup natural peanut butter xylitol-free
  • 1 ripe banana mashed
  • 1 egg
  • 1/4 cup unsweetened applesauce
  • 1/2 teaspoon baking powder
  • 1/4 cup water as needed

Optional dog-safe topping:

  • 1/4 cup plain yogurt unsweetened
  • 1 tablespoon peanut butter

Instructions

Step 1: Preheat the oven

  • Preheat your oven to 350°F (175°C). Lightly grease your mini bundt pan.

Step 2: Mash the banana

  • In a mixing bowl, mash the banana until smooth. This adds natural sweetness and moisture.

Step 3: Mix wet ingredients

  • Add the peanut butter, egg, and applesauce. Mix until smooth and creamy.

Step 4: Add dry ingredients

  • Stir in the oat flour and baking powder. Mix until combined. Add a little water if the batter feels too thick.

Step 5: Fill the molds

  • Spoon the batter evenly into the bundt molds, filling about 3/4 full.

Step 6: Bake

  • Bake for 20–25 minutes, or until a toothpick inserted comes out clean.

Step 7: Cool completely

  • Let the cakes cool in the pan for 5 minutes, then transfer to a rack to cool completely.

Step 8: Add topping (optional)

  • Mix yogurt and peanut butter, then drizzle or spread lightly on top.

Notes

  • Always use xylitol-free peanut butter (this is critical)
  • Use very ripe bananas for better sweetness
  • Don’t overmix the batter
  • Keep an eye on baking time to avoid dryness
  • Let cakes cool completely before serving
