Ladle (optional, but helpful for serving)
Biscuit cutter (if making homemade biscuits)
- 1 pound ground breakfast sausage pork sausage works best
- 3 tablespoons all-purpose flour
- 2 ½ to 3 cups whole milk adjust for thickness
- ½ teaspoon salt adjust to taste
- 1 to 1 ½ teaspoons freshly ground black pepper
- Optional: pinch of crushed red pepper flakes
For serving:
- 6 –8 freshly baked biscuits
Step 1: Brown the Sausage
Place your skillet over medium heat. Add the ground sausage. Break it apart with a wooden spoon as it cooks. You want small, crumbly pieces.
Cook until the sausage is fully browned and no pink remains. This usually takes about 6–8 minutes. Let it develop some golden brown bits — that’s pure flavor.
Do not drain the fat unless there is an excessive amount. The drippings are essential for the gravy.
Step 2: Add the Flour
Sprinkle the flour evenly over the cooked sausage. Stir well so the flour coats every piece.
Cook this mixture for about 1–2 minutes. This step removes the raw flour taste and forms the base of your roux. The mixture will look slightly pasty — that’s exactly what you want.
Step 3: Pour in the Milk
Slowly pour in about 2 ½ cups of milk while stirring continuously. I like to add it in stages. Stir, let it thicken slightly, then add more.
Switch to a whisk if needed to break up any lumps.
Step 4: Simmer and Thicken
Reduce heat to medium-low. Let the gravy gently simmer for 5–7 minutes. Stir often.
You’ll notice it thickening beautifully. If it becomes too thick, add a splash more milk. If it’s too thin, let it cook a little longer.
