Making the sesame-ginger vinaigrette begins with peeling and finely chopping fresh garlic and ginger. Once all the ingredients for the sesame-ginger vinaigrette are combined, place them all in a blender and blend until smooth.
Allow the vinaigrette to sit for 1-2 hours in an airtight container.
After that, make the sauce by chopping the cilantro. Next, add the lime juice, the sesame-ginger vinaigrette, the honey, the sweet ginger soy sauce, the Sriracha chili paste, the sesame oil, the fresh cilantro, and the red pepper flakes to the blender, and blend for two to three minutes until completely emulsified.
If necessary, adjust any of the ingredients in your sauce.
Continue blending for another 30 seconds, seasoning with salt and pepper.
Let the sauce sit in an airtight container in the fridge for four to eight hours so the flavors can blend for that authentic Pokework's Classic sauce taste.
Before serving, let the sauce warm up to room temperature.
