- 3/4 cup Roasted red pepper (chopped)
- 1 cup Smoked meat (chopped)
- 4 cups Cooked black beans
- 1 tablespoon Fresh garlic (minced)
- 1 tablespoon Agave syrup
- 1 tablespoon Lime juice
- 2 tablespoons Olive oil
- 2 tablespoons Chipotle powder
- 1 cup Broth or stock
- 1/3 cup Fresh orange juice
- 1 Small-sized onion (chopped)
- 1 tablespoon Cumin
Cook the onion and garlic in olive oil in a pan on medium heat until they are soft.
Stir occasionally while sauteing them with cumin and chipotle powder.
Pour in the broth and juices, and add some agave syrup if you'd like it to be sweeter. Continually stir the mixture to prevent it from sticking to the bottom.
Chop the meat and cook it in the mixture until it is well cooked.
Stir together the beans, roasted pepper, and beans.
Cook the mixture on low heat for 15 to 20 minutes to ensure the beans and meat have the perfect texture.
Remove them from the heat and garnish with your favorite ingredients!
- For a thicker consistency, let the beans simmer uncovered to reduce the liquid.
- If you prefer a soupier texture, add a bit more broth or stock.
- Experiment until you achieve the desired thickness.
- Adjusting consistency is a personal preference, so feel free to customize it to your liking!
