- 2 tablespoons Honey
- 1/4 cup Vegetable oil
- 1/2 cup Soy sauce
- 1/4 cup Fresh lime juice (from 2-3 limes)
- 3 Minced pickled jalapenos
- 1/4 cup Chopped cilantro
- 4 Minced garlic cloves
- 3 Chopped green onions
Mix together the soy sauce, lime juice, pickled jalapenos, cilantro, green onions, and garlic in a medium bowl.
To the bowl, add the vegetable oil and honey and Whisk again until well combined.
In a zip-top bag or container with a lid, place the chicken pieces. Pour the marinade over all the chicken pieces, making sure every piece is covered. Put the seal on the container and place it in the refrigerator for 30 minutes to 2 hours.
The chicken should be removed from the marinade by letting any excess drip off. Discard used marinade. Turn on the grill, broiler, or skillet to medium-high and preheat.
You can grill, broil, or pan-fry chicken until it is cooked through and caramelized, about 5-8 minutes per side. During cooking, if desired, brush on extra marinade.
Grilled chicken is best served warm with lime wedges, cilantro, and diced onions if desired.
