- ¼ cup honey (or use coconut syrup or date syrup for a vegan option)
- 1 teaspoon vanilla extract
- ⅓ cup protein powder (your favorite flavor – vanilla or chocolate both work well)
- ⅓ cup flaxseed meal
- ½ cup rolled oats (gluten-free if needed)
- ½ teaspoon ground cinnamon
- 1 tablespoon chia seeds
- 1 tablespoon mini chocolate chips (use dairy-free chips for a vegan version)
- Optional: ¼ cup unsweetened shredded coconut for extra texture and flavor

Method 1: A food processor
Add wet ingredients: In a bowl of your food processor, combine the peanut butter, the honey, and the vanilla extract.
Add dry ingredients: Throw in the protein powder, flaxseed meal, oats, cinnamon, and chia seeds.
Blend: Pulse until a thick, sticky dough has been formed.
Mix-ins: Add the chocolate chips (and coconut, if using) and pulse a few more times just until evenly distributed.
Form: With a cookie scoop or hands, roll the dough into 10 equally sized balls.
Store: Store in an airtight container, refrigerate.
Method 2: Without Food Processor.
Combine wet ingredients: In a medium bowl, whisk together peanut butter, honey, and vanilla until smooth.
Add dry ingredients: Add oats, protein powder, flaxseed, cinnamon, and chia seeds and stir until a sticky dough is obtained.
Add-ins: Fold in chocolate chips and coconut (optional).
Change the consistency: In case your mixture appears too dry or crumbly, add a tablespoon of almond milk or an additional spoonful of nut butter to make everything stick.
