Salmonberry Jam Recipe

Ingredients
  

  • 1 (2 ounces) package Powdered fruit pectin
  • 4 cups Salmonberries
  • 6 ½ cups White sugar

Instructions
 

  • Ensure the jars, lids, and rings are clean and sterilized by inspecting and washing them properly.
  • After washing and crushing the berries, pass half through a cheesecloth or sieve to remove some seeds.
  • Into a large pot, transfer all of the crushed berries.
  • Over high heat, stir constantly while adding the sugar and bringing the mixture to a full boil.
  • Continuously stir the mix while adding the pectin and boiling for one minute.
  • Ladle the mixture into the jars quickly, leaving 1/8 inch of space at the top and skimming off any foam.
  • Make sure there are no air bubbles inside the jars by running a clean knife around the inside.
  • Top the jars with lids and screw them on tightly after wiping off the jar rims with a moist paper towel.
  • Using a rack at the bottom of a large stockpot, place the jars in a holder.
  • Submerge the jars in boiling water until they are at least an inch deep.
  • For 5 minutes, cook the jars covered in boiling water.
  • Allow the jars to rest for 24 hours several inches apart after they are removed from the pot.
  • Make sure the lids aren't moving by pressing the center with your finger.
  • You can store the jars for up to a year after removing the rings.
