Ingredients

  • 2 Gallons Water
  • 3 Whole lemons
  • 3-1/2 pound Honey
  • 1 packet White Wine Yeast
  • 25 packets Any dark tea
  • 2 large Cinnamon sticks
  • 2-1/2 pounds Fresh blackberries

Instructions

  • A large stockpot on the stovetop should be filled with 2 gallons of water and brought to a boil. Three whole lemons and 25 packets of dark tea should be added to boiling water when it comes to a boil. Stir occasionally while simmering this mixture for 10 minutes.
  • Take the pot off the heat after 10 minutes and let it cool for 20 minutes. As soon as the mixture has cooled, strain it into a 5-gallon fermenting bucket that has been cleaned and sanitized. In the next step, add 3 1/2 pounds of honey to the bucket and stir until it has completely dissolved.
  • Two cinnamon sticks, two and a half lbs of blackberries, and one packet of white wine yeast should be added now. All ingredients need to be mixed until they are fully incorporated.
  • Make sure the bucket is tightly covered with a lid or airlock and place it in a cool, dark place for about 2-4 weeks. To ensure everything is going according to plan, keep an eye on the fermentation process every few days.
  • You should be able to bottle your mead after two weeks! Sanitize bottles and cork them tightly after transferring the mead. For at least one month before drinking, keep the bottle cool and dark. It will be more flavorful and smoother if you let your mead age longer!

Notes

  • Start with the highest-quality ingredients you can find to ensure the best flavor in your mead.
  • Maintain a strict focus on sanitation throughout your brewing process to prevent unwanted contaminants.
  • Carefully select a yeast strain that complements the specific flavors and characteristics you desire in your mead.
  • Keep your fermentation temperature within the recommended range for your chosen yeast to avoid off-flavors and ensure a successful fermentation.
  • During the initial stages of fermentation, oxygenate the must by stirring or shaking it gently to provide the yeast with the necessary oxygen for healthy growth.
  • If you're adding fruits or spices, freezing them before use can help break down their cell walls and extract more flavor during infusion.
  • Don't hesitate to experiment with different ingredients and styles to discover unique flavor profiles that suit your preferences and creativity.
