Ingredients
  

For the cake base:

  • 1 box about 430 grams strawberry cake mix
  • Ingredients required on the cake mix box usually 3 eggs, ½ cup oil, and 1 cup water
  • 1 cup shredded sweetened coconut optional but traditional in earthquake cakes
  • ½ cup white chocolate chips optional but lovely

For the cream cheese layer:

  • 225 grams 8 ounces cream cheese, softened
  • ½ cup 115 grams unsalted butter, melted
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract

Optional toppings:

  • Fresh sliced strawberries
  • Powdered sugar for dusting
  • Strawberry sauce or glaze

Instructions
 

Step 1: Preheat the oven

  • Preheat your oven to 175°C (350°F). Lightly grease your 9x13-inch baking pan.

Step 2: Prepare the cake batter

  • In a large mixing bowl, combine the strawberry cake mix with eggs, oil, and water according to package instructions. Mix until smooth.
  • If using shredded coconut and white chocolate chips, fold them gently into the batter. These add texture and richness.

Step 3: Pour into the pan

  • Pour the strawberry batter into the prepared baking pan and spread it evenly with a spatula.

Step 4: Make the cream cheese mixture

  • In a separate bowl, beat the softened cream cheese until smooth and creamy. Add melted butter, powdered sugar, and vanilla extract. Mix until fully combined and silky.

Step 5: Layer the cream cheese

  • Spoon dollops of the cream cheese mixture over the strawberry batter. Do not spread it evenly across the surface.

Step 6: Lightly swirl

  • Using a knife, gently swirl the cream cheese mixture into the cake batter. Do not overmix. You want visible swirls and pockets.

Step 7: Bake

  • Place the pan in the oven and bake for 40–45 minutes. The center should be set but still slightly soft. The top will crack and look beautifully uneven.

Step 8: Cool before slicing

  • Allow the cake to cool for at least 20–30 minutes before slicing. This helps the cream cheese layer firm up slightly.
