Ingredients

  • 1 thinly sliced chicken breast
  • 5 tablespoon Mirin
  • 1 teaspoon Oil
  • 1 large onion (thickly sliced)
  • 1 bell pepper (thickly sliced)
  • Half-rounds of 1 small zucchini, sliced to 5mm
  • 1 1/2 teaspoon Sesame seeds
  • Plain boiled rice to serve

Instructions

  • Stir together the chicken, mirin, and soy sauce in a bowl. Refrigerate overnight or for 30 minutes to marinate.
  • Teppanyaki hot plates, griddle pans, fry pans, or woks should be heated. A very light coating of oil should be applied to the onions, peppers, and courgettes. 5 minutes should be enough to brown the mixture on the hotplate.
  • Keep the chicken aside after draining it from the marinade. Stir frequently while cooking the chicken and vegetables until the chicken is no longer pink in the middle and slightly charred - about 8 minutes.
  • In the meantime, bring the marinade to a boil in a small saucepan and keep warm on low heat.
  • Prepare a plate of boiled rice and arrange the chicken on one side, sprinkled with sesame seeds, followed by the vegetables. The marinade should be poured over the chicken and served.
