Ingredients
  

  • 1 cup  Peeled and sliced carrots (¼-inch)
  • 1 pound Boneless Skinless Chicken Breast
  • 1 tablespoon Vegetable oil
  • 1/2 cup Onion cut into ¼-inch slices
  • 1/2 Bunch Cilantro
  • 1 cup Jasmine rice
  • 1 1/2 cups Bell peppers
  • 1 cup Peeled and sliced potatoes (¼-inch)
  • 11 ounce Trader Joe’s yellow curry sauce

Instructions
 

  • Cook the sticker jasmine rice first by using your rice cooker or a pot.
  • A large pot of vegetable oil should be heated over medium heat. In the meantime, add the chicken breasts and cook for about 5 minutes on both sides.
  • Once the chicken is done cooking, remove it from the pot and set it aside. The onion, bell peppers, carrots, and potatoes should be added to the pot as well. Cook for about 5 minutes until the vegetables have a slight softening effect.
  • The Lemon Curry sauce from Trader Joe's has to be added to the pot as well. Return the chicken to the pot and simmer it on low for 15 minutes. Approximately 10 minutes is enough time to cook the chicken.
  • Now that your curry is ready, you can serve it. 

Notes

  • For a spicier kick, add a pinch of red pepper flakes or a dash of hot sauce during cooking.
  • If you prefer milder flavors, start with less curry sauce and adjust gradually to your liking.
  • Tailor the spice levels to match your taste preferences for a personalized curry experience.
