Ingredients
  

  • pounds round steak or chuck steak
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons vegetable oil
  • 1 large onion sliced
  • 1 green bell pepper sliced
  • 2 cloves garlic minced
  • 1 can 14 oz diced tomatoes
  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon sugar
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • Fresh parsley for garnish

Instructions
 

Step 1: Tenderize the Steak

  • Place the round steak on a cutting board and use a meat mallet to pound it evenly. This step helps soften the meat and allows it to absorb flavor while cooking.

Step 2: Prepare the Seasoned Flour

  • In a shallow bowl, mix together the flour, salt, pepper, and paprika.

Step 3: Coat the Meat

  • Dredge the steak pieces in the seasoned flour, pressing lightly so the coating sticks well. This will help create a rich gravy later.

Step 4: Brown the Steak

  • Heat vegetable oil in a large skillet or Dutch oven over medium heat. Add the coated steak pieces and brown them for about 3–4 minutes per side.
  • Once browned, remove the steak and set it aside.

Step 5: Cook the Vegetables

  • In the same pan, add sliced onions and bell peppers. Cook them for about 5 minutes until softened. Add the garlic and cook for another minute until fragrant.

Step 6: Build the Sauce

  • Pour in the diced tomatoes, beef broth, Worcestershire sauce, sugar, thyme, and oregano. Stir well to combine.

Step 7: Return the Steak

  • Place the browned steak pieces back into the pan, nestling them into the sauce.

Step 8: Simmer Slowly

  • Cover the pan and reduce heat to low. Let the steak simmer gently for about 1½ hours.
  • During this time the meat becomes tender and the sauce thickens into a rich gravy.

Step 9: Serve

  • Sprinkle fresh parsley over the finished dish and serve hot.
