Ingredients
  

For the Fries

  • 4 large Russet potatoes
  • Vegetable oil for frying

For the Voodoo Sauce

  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon Louisiana-style hot sauce
  • 1 tablespoon Ketchup
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Smoked paprika
  • 1/2 teaspoon Onion powder
  • 1/2 teaspoon Dried thyme
  • 1/2 teaspoon Dried oregano
  • 1/4 teaspoon Cayenne pepper
  • Salt and black pepper to taste
  • 1/2 cup Mayonnaise

Instructions
 

  • The oven should be preheated to 425°F (220°C).
  • Peel the russet potatoes and cut them into thick fries, about 1/4 to 1/2 inch wide.
  • To remove excess starch, rinse the cut fries under cold water and pat them dry.
  • In a large saucepan or deep fryer, heat vegetable oil to 350°F (175°C).
  • Make batches of fries and cook them until they are golden brown and crisp. Place paper towels over the fries after they have been removed from the saucepan.
  • Add salt to taste.
  • Prepare the Voodoo Sauce while the fries cook. Whisk or stir together the mayonnaise, ketchup, Worcestershire sauce, hot sauce, garlic powder, smoked paprika, onion powder, dried thyme, dried oregano, cayenne pepper, salt, and black pepper in a mixing bowl.
  • Spread the fries evenly on a baking sheet after they have been cooked.
  • Ensure each fry is coated with the Voodoo Sauce.
  • Preheat the oven to 350 degrees and bake the baking sheet for about 5 minutes or until the sauce is warm and bubbly.
  • Let the fries cool for a bit after you remove them from the oven.
