2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup fresh pineapple chunks (or canned, drained)

1 red bell pepper, diced

1 zucchini, sliced into half moons

1 small red onion, cut into chunks

2 cloves garlic, minced

1 tablespoon olive oil

Salt and black pepper, to taste

Sesame seeds and chopped scallions, for garnish (optional)

For the Teriyaki Sauce:

1/3 cup low-sodium soy sauce

2 tablespoons honey or brown sugar

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 teaspoon cornstarch

1/4 cup water

1 teaspoon grated fresh ginger

1 garlic clove, minced

Instructions To Make Teriyaki Chicken and Pineapple Foil Packets

1. Make Teriyaki Sauce

Add soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic to a small saucepan. Simmer on medium heat. Combine the cornstarch and water, and add the mixture to the sauce. Bring to a simmer and thicken, 2 to 3 minutes. Take off the heat and allow to cool a little.

2. Prep and Preheat

Heat the oven to 400°F (200 °C) or prepare your grill for a medium heat. Tear 4 large pieces of heavy-duty aluminum foil (or use 2 layers of regular foil) and lightly spray or oil.

3. Put the Packets Together

Toss chicken, pineapple, bell pepper, zucchini, red onion, minced garlic, olive oil, and a couple of spoonfuls of the teriyaki sauce in a large bowl. Toss to coat.

Pour the mixture into the foil sheets equally. Pour additional teriyaki sauce on each heap. Put the ingredients in the foil and close tightly to make packets.

4. Bake the Packets

Oven: Bake foil packets on a baking sheet at 350 degrees for 2025 minutes, or until chicken is completely cooked.

Grill: Cook packets on the grill 1520 minutes, turning once.

Campfire: Cook over hot coals or on a grill grate approximately 20 minutes, turning occasionally.

5. To Serve and Garnish

Very carefully open the packets (be careful of steam!). Sprinkle with sesame seeds and cut scallions, and serve hot. They are good right out of the foil or on top of a bed of rice or noodles.
