Teriyaki Chicken and Pineapple Foil Packets are single-serving meal packets that consist of chicken, fresh pineapple, and vegetables seasoned and wrapped in foil and cooked in the oven, on the grill, or even over a campfire.

- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 cup fresh pineapple chunks (or canned, drained)
- 1 red bell pepper, diced
- 1 zucchini, sliced into half moons
- 1 small red onion, cut into chunks
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and black pepper, to taste
- Sesame seeds and chopped scallions, for garnish (optional)
For the Teriyaki Sauce:
- 1/3 cup low-sodium soy sauce
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 tablespoon sesame oil
- 1 teaspoon cornstarch
- 1/4 cup water
- 1 teaspoon grated fresh ginger
- 1 garlic clove, minced
Make Teriyaki Sauce
Add soy sauce, honey, rice vinegar, sesame oil, ginger, and garlic to a small saucepan. Simmer on medium heat. Combine the cornstarch and water, and add the mixture to the sauce. Bring to a simmer and thicken, 2 to 3 minutes. Take off the heat and allow to cool a little.
Put the Packets Together
Toss chicken, pineapple, bell pepper, zucchini, red onion, minced garlic, olive oil, and a couple of spoonfuls of the teriyaki sauce in a large bowl. Toss to coat.
Pour the mixture into the foil sheets equally. Pour additional teriyaki sauce on each heap. Put the ingredients in the foil and close tightly to make packets.
Bake the Packets
Oven: Bake foil packets on a baking sheet at 350 degrees for 2025 minutes, or until chicken is completely cooked.
Grill: Cook packets on the grill 1520 minutes, turning once.
Campfire: Cook over hot coals or on a grill grate approximately 20 minutes, turning occasionally.
