Ingredients
  

  • 3 pounds Round eye roast
  • 2 tablespoon Olive oil
  • 1 tablespoon Paprika
  • 2 teaspoon Salt
  • 2 teaspoon Garlic powder
  • 2 teaspoon Onion powder
  • 1 teaspoon Black pepper
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Celery seeds
  • ½ teaspoon Ground cayenne pepper

Instructions
 

  • Add all the seasonings to a small bowl and mix well.
  • The roast should be dried with a paper towel. Oil the roast all over with olive oil and rub it in. Once the roast has been seasoned, coat it with the mixture. Cover the roast and refrigerate for 12 hours or up to 24 hours (for best results, you should leave it in the fridge for 24 hours).
  • Before cooking, take the roast out of the refrigerator and let it sit at room temperature for one hour. Bake at 275°F for 30 minutes.
  • Cook for one hour at 130°-135°F for medium-rare (highly recommended) or for one and a half hours at 140°-145°F for medium. Check the internal temperature of the meat thermometer after opening the door.
  • The roast should be removed from the oven after 30 minutes and allowed to cool (uncovered) to room temperature. The roast should be transferred to a dish. It is recommended that you refrigerate the mixture for at least four hours or overnight. 
  • The meat should be thinly sliced just before eating using a meat slicer or a very sharp knife. The bread needs to be toasted. The remoulade sauce should be spread on the bread. Onions, lettuce, and roast tomatoes can also be added.
