- 1 box Jiffy cornbread mix (or any boxed cornbread mix)
- 1 egg
- ⅔ cup milk
- 1 pound ground beef
- 1 cup Rotel Tomatoes
- 1 cup corn, drained
- 1 cup red beans, drained
- 1 cup shredded Mexican blend cheese
- 2 tablespoon taco seasoning
- Green onions to serve
Prepare the oven by preheating it to 390°F (200°C).
Cornbread is prepared by mixing cornbread mix with eggs and milk in a mixing bowl. Place aside.
Use nonstick cooking spray to spray a nonstick skillet over medium heat. Once the ground beef has been cooked, break it apart and brown it on all sides. Remove excess grease from the pan.
The ground beef should be seasoned, shredded cheese added, and Rotel tomatoes, pinto beans, and corn are added. Allow to simmer for 5 minutes.
Put parchment paper or nonstick spray on a 9x13-inch baking dish
To the ground beef mixture, add the cornbread mixture and stir until well combined
In a baking dish, combine everything.
The filling should be well browned and a toothpick inserted in the center comes out clean after 45 minutes of baking.
To serve, top with sour cream and fresh green onions.
