- 2 cups Penne pasta (cooked+drained)
- 2 tablespoon Olive oil
- ½ cup Tin mushrooms (sliced)
- 2 oz Yellow onion (diced)
- 3 cups Baby spinach (chopped)
- 1 cup Tomatoes (ripe+diced)
- ¼ cup All-purpose flour
- 4 oz ½ stick butter
- 3 cups Heavy whipping cream
- 1 cup Parmesan cheese (powdered or shredded)
- ½ cup Asiago cheese (powdered or shredded)
- 2 Garlic cloves (minced)
- Salt and pepper to taste
Sauté mushrooms, onions, and garlic in oil in a large skillet until fragrant.
The spinach and tomatoes should be added while stirring. Put aside in a warm place.
Butter and flour are melted in a saucepan, then whisked together to form a roux.
The cream should be poured in and brought to a simmer. Water or stock can be added to loosen the sauce.
During the thickening process, whisk the mixture and season with salt and pepper. Make the necessary adjustments.
You can add cheeses like Parmesan and Asiago if you want.
The pasta and the sauteed vegetables can be added together. Prepare the mix and serve it.
