Goya green split peas should be sorted and washed after opening the bag.
Chop onion, mince garlic, dice carrot, and dice smoked ham into an 8-quart pot and heat the oil on medium heat.
Stir the mixture for 5 minutes and then turn off the heat.
Cook 6 cups of water at medium-high heat, add Goya Peas, Chicken Bouillon, and Sazon, and bring to a boil.
Turn the heat to low and stir the mixture with a wooden spoon.
The peas should be tender after 1 to 1 1/2 hours of simmering.
Depending on your taste, add salt and ground black pepper.
