Ingredients
  

  • 3 pound Sirloin tip roast
  • 2 tablespoons Olive oil (divided)
  • 2 teaspoons Montreal steak seasoning
  • 1 teaspoon Kosher salt
  • ½ teaspoon Black pepper
  • 1 Large Onion, (thickly sliced)
  • 4 Minced cloves of garlic
  • 2 cups Beef broth (divided)
  • 1 pound  Potatoes (cut into 1-inch pieces)
  • 4 Large carrots (chopped into 1-inch chunks)
  • 2 tablespoons Worcestershire sauce

FOR GRAVY

  • ¼ cup Cold water
  • 2 tablespoons Cornstarch

Instructions
 

  • In an Instant Pot with a capacity of 6 or 8 quarts, press the Saute button. Put salt and pepper into a small bowl and mix well. All sides of the roast should be coated with the mixture.
  • The roast should be placed in the inner pot after one tablespoon of oil has been heated. Ensure that the beef is evenly browned on both sides by searing it for 3-4 minutes. Set aside the roast after removing it from the oven.
  • The remaining oil should be heated, then the onions should be added and sauteed for 3 minutes. Adding minced garlic and sautéing for 30 seconds will release its flavors.
  • Select Cancel and press it. A wooden spoon can be used to scrape the brown bits off the bottom of the pot after pouring ½ cup of beef broth into the Instant Pot.
  • The roast should be returned to the pot. The potatoes and carrots should be arranged around the roast, then the beef broth and Worcestershire sauce should be poured over them. Make sure the pressure valve and lid are closed and secure.
  • Turn the dial to Manual, set the timer for 10 minutes, and toggle the pressure to high. The pressure valve should be released gently after the cooking time has elapsed. Take off the lid when you hear the pin drop. Make sure the thickest part of the roast is at the right temperature using a meat thermometer. You should aim for 120 degrees Fahrenheit when roasting beef for medium-rare.
  • After transferring the roast, potatoes, onions, and carrots to a platter, let them rest. The pot's Saute button should be pressed. Cold water and cornstarch should be whisked together. The gravy will thicken as it simmers, once the broth has boiled, stir in the cornstarch mixture. As the gravy thickens, season to taste with salt and pepper.
  • Served with roast and vegetables, gravy is delicious!
