Make the marinade by combining oyster sauce, soy sauce, honey, rice vinegar, minced garlic, grated ginger, and red pepper flakes together in a bowl.
Using a large resealable plastic bag or a bowl, place the chicken wings in there. Be sure to thoroughly coat the wings in the marinade. Cover the bowl with a lid or seal the bag and place it in the refrigerator for at least one hour, or preferably overnight for best results.
Using a deep fryer or pot with a heavy bottom, heat oil to 350°F (175°C).
Let the marinated wings come to room temperature for about 15 minutes after you remove them from the fridge.
Make sure not to overcrowd the pot when adding the wings to the hot oil. To get golden brown and crispy wings, fry them for about 10-12 minutes.
Once the wings have been removed from the oil, make sure any excess oil is soaked up with paper towels.
The remaining marinade should be heated over low heat, stirring constantly, until slightly thick.
Ensure that the fried wings are well coated with the thickened marinade before serving.
