- 3 cups cooked sweet potatoes sliced or cubed
- 3/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 2 eggs
- 12 tablespoons butter melted, divided use
- 1 cup brown sugar
- 1/3 cup flour
- 1 cup chopped pecans
- cooking spray
Preheat the oven to 350 degrees Fahrenheit. Prepare a 9" square pan or a 2-quart casserole dish by spraying it with cooking spray.
The sweet potatoes, granulated sugar, salt, vanilla extract, eggs, and 6 tablespoons of butter should all be placed in a mixing bowl together. Blend and beat until fluffy with a mixer.
Place the sweet potato mixture in an even layer in the prepared dish.
Melt the remaining butter and brown sugar in a medium bowl. Mix in the flour and pecans.
Place the sweet potatoes on a baking sheet and sprinkle with the brown sugar mixture.
It takes 30-40 minutes for the sweet potatoes to become hot and the topping to brown lightly. To complete the bake time, cover your dish with foil if your topping browns too quickly.
Then, let it sit for 10 minutes before serving.
