Ingredients
  

  • 3 cans Chicken broth
  • 1 pound Diced meat
  • 1 1/2 cups Green chilies
  • 2 cups Water
  • 1 12-oz can Jalapenos
  • 1 cup Flour
  • 1 cup Finely chopped onions
  • 1/2 cup Lard
  • 1 tablespoon Black pepper
  • 1 tablespoon Oregano
  • 1/4 tablespoon Grounded cumin
  • 14 ounce can Tomatoes
  • 1/4 tablespoon Sage
  • 2 tablespoons Chicken bouillon
  • 4 Minced cloves garlic
  • 6 ounces Tomato paste
  • 1 1/2 tablespoons Grounded mustard

Instructions
 

  • As a first step, you need to use a food blender and add some chili peppers to the blender bowl. Add the jalapeno peppers and combine them.
  • To adjust the consistency, add a little water to the blended tomato sauce and blend at medium speed.
  • In a bowl, combine the pureed mixture.
  • The beef should be placed in a large pot. Make sure the lard is combined with the meat and cooked on low heat until the meat is browned.
  • The diced onions must be added to your meat once the required color is achieved. Just a few minutes will be enough to cook the onion.
  • After that, prepare your seasoning in a bowl. In a large bowl, combine the minced garlic and spices and seasonings with the minced garlic.
  • Add some water to the chicken broth and then pour it over your meat. It is now time to mix the pureed chili and tomato mixture into your meat.
  • Then add the tomato paste and continue to simmer the meat.
  • Add the lard to the second small saucepan. The butter must be melted in this pan, then there must be chicken bouillon added and it must be stirred well while cooking.
  • You can now add the sauce to the meat once the sauce is ready. Continue simmering for half an hour after adding them to the meat and rest of the sauce.
  • The Santiago's Green Chili is now ready to serve after cooking for 20 more minutes. 

Notes

  • Adjust the spice level to taste by modifying the quantity of black pepper and ground cumin.
  • Add a pinch of smoked paprika for a subtle smoky undertone.
  • Brighten up the flavor with a splash of fresh lime juice just before serving.
