- A whole uncut ribeye for each person (about 12 oz.)
For Marinade:
- 2 Tablespoons Black pepper
- 2 Tablespoons Sugar
- 1/2 cup Kosher salt
- 1/4 cup Garlic (chopped)
- 1/4 cup Liquid smoke
- 1/4 cup Soy sauce
To begin, prepare the marinade. Preparation should be done two days in advance. All marinade ingredients should be mixed together. In a mixing bowl, combine all the ingredients and refrigerate overnight. All those wonderful flavors will be able to integrate properly during this time.
Marinating the ribeye is the next step. A large pan with a rack should be used to cook the prime rib. The marinade should be half poured over the top side and rubbed throughout. On the second side, flip the meat over, pour the remaining marinade over it, and rub it all over with it. Refrigerate overnight with the pan covered.
Your oven should be set to 450 degrees Fahrenheit. The meat should be baked for 30 minutes until brown and seared on the outside. Afterward, reduce the temperature to 250 degrees Fahrenheit. Let the meat roast for another two hours, or until it reaches 120 degrees on a meat thermometer.
It's medium-rare at that temperature. Wait until the reading for each state is 10 degrees higher (i.e. 130 degrees for medium, 140 degrees for medium-well).
It is recommended that you rest your meat for at least an hour before cutting it into slices. Prime rib will be even juicier and tastier if the juices have time to settle in the meat.
