Ingredients
  

  • 8 slices Sandwich bread or rye bread
  • 1 pound Ground beef
  • 4 tablespoons Unsalted butter or mayonnaise
  • 3/4 cup Onions
  • 1 teaspoon Black pepper
  • 1 teaspoon Kosher salt
  • 1 package Worcestershire sauce
  • Freshly grated Swiss cheese
  • Freshly grated Cheddar cheese

Instructions
 

  • Create a patty with the ground beef, about ¾ inches thick. Black pepper and kosher salt should be sprinkled on both sides of the patty.
  • Cook the patty for 4 minutes per side in a large skillet over medium-high heat (or until desired doneness). After the patty has been cooked according to your preference, remove it and set it aside.
  • Melt two tablespoons of butter or mayonnaise in the same skillet. After the onions are diced, cook them for 8 minutes, or until they become caramelized. 
  • One side of four slices of rye bread should be brushed with butter or mayonnaise. Stack two slices of bread, then top them with a cooked patty, onion, and cheese. Spread butter/mayo on the butter/mayo side of the remaining two slices of bread.
  • Over medium-high heat, melt 2 tablespoons of butter or mayonnaise in a large non-stick skillet. The patty melts should be cooked for 3 minutes per side (or until golden brown). As soon as the dish is done, remove it from the heat and serve it right away.

Notes

  • Start with high-quality ground beef, preferably around 80% lean for juiciness.
  • Season the beef patty thoroughly with Worcestershire sauce, black pepper, and kosher salt for flavor.
  • Shape the patty carefully, avoiding over-packing, to fit the bread slices.
  • Caramelize the onions slowly over low heat until they turn sweet and golden brown.

  • Spread a thin layer of butter or mayonnaise on the bread slices before grilling for a crispy crust.
  • Ensure your griddle or skillet is hot before placing the patty on it to get a good sear.

  • Cook the patty to your preferred level of doneness, whether medium-rare, medium, or well-done.
